Well Done Starbucks

This roll at Starbucks is gluten-free and apparently they always have at least one gluten-free sandwich available.  One of my latest Cafe Tour clients (a coeliac) pointed it out and said how few chain or independent cafes have gluten-free sandwiches.  Guess which cafe always gets his custom.

Sin & Obesity

POD sell Sin gluten free chocolate brownies and other sweet delights - "sin" from Spanish, meaning 'without'.

Cafes like to think they offer occasional treats but we also have to admit to being purveyors of sin in terms of gluttony/obesity.  That's why fresh fruit and healthy items need to be on the menu (POD does this well) and why good presentation is key to sales of something that none of us needs.

Foodservice guru Peter Backman of Horizons is just back from the Chicago National Restaurateurs Association Show and reports:
"The American consumer has been persuaded that gluten-freedom is the path to a happy life and consequently gluten free is all the rage. You want gluten free bread of course - you can have hamburger buns, sub buns, hot dog buns, muffins, cookies, desserts (including gluten free mudslide pie) - and more".
